It has definitely been a crazy week around here. The end of the school year and holidays. Hopefully I will get back on a schedule this week. Tonight we had one of our favorite dinners and soooooo easy too.
Ingredients
16 tortillas
16 oz salsa
16 oz sour cream
12 oz can chicken (you can used any leftover chicken or whatever you have)
1 can refried beans
1/2 Cup guacamole
1 Cup cheddar cheese
1 small bell pepper (chopped)
Preheat oven to 350. So you start by mixing the sour cream and salsa together. Put half of the mixture in a separate bowl and add the chicken. Start layering: tortilla, chicken, salsa and sour cream mixture, tortilla, refried beans, tortilla, guacamole, tortilla, salsa and sour cream mixture, bell pepper, cheese. Once everything is layered put on cookie sheet and bake for 10 min to heat thru and melt cheese. Makes 4 Pizzas.

Fun Kids Up Bookmarks
Look at this great find I got at Goodwill. I am super excited since I have been wanting to make some apothecary jars. But that is for another day.
Me and two of the crazy kids made these fun bookmarks. The kids call them their Up bookmarks. First we took pictures of them standing like they were holding the string. Then I sent the pictures to be developed at Wal Mart. I could have also just printed them out on the printer but I hate using that much ink and since it's only 20 cents a picture to have Wal Mart print them, that's what we did. I took a few different pictures of each so they could choose which one they liked best.
Next we glued the picture onto colored cardstock. NOT gluing the hands where they will be holding the string to the cardstock. After it's glued, cut the picture out as close to the picture as possible.
Now we made our tassles using embroidery floss. First we wrapped the floss around a piece of scrap paper about 1 1/2 inches wide approx. 15 times depending how "fluffy" you want your tassle. Once wrapped cut another piece of floss approx. 6 inches long. Tie this piece around the floss you wrapped on the paper and tie a knot. Tie the knot very tight as it will be holding your tassle together. Next punch a small hole thru the cardstock only and thread the floss thru and tie another knot. Cut the floss that was wrapped around the paper in half.
At this point put a small amount of glue where the hands are that was left unglued before. Laminate either with laminate or clear contact paper and cut around again making sure to leave enough of a seam to keep it sealed. There you have your Up bookmarks and are ready to fly away in your book.

Yummy Dinner
So we tried a new chicken dinner tonight and it was AMAZING! All the crazy kids ate it and actually liked it. Even the very picky and only eats meat on certain days, Crazy Kid #2. Overall it was a great success and will be added to our list of favorites menu. Thank you again pinterest.
Country Club Chicken
Recipe from Kayotic Kitchen
1 pound spaghetti (I used fettechini)
4 chicken breasts
1 large onion, diced
7 oz mushrooms, sliced (I doubled the mushrooms cuz I really like them)
2 cans cream of mushroom soup
5 slices bacon (I used real bacon bits cuz I really don't like to cook bacon)
1/4 cup dry white wine or chicken broth
2/3 cup sharp cheddar
1 apple (I used Gala and peeled it), diced
butter or oil
salt & pepper
Cook bacon in skillet until crisp; set aside and crumble. Do not drain pan.
Add butter to pan. Season chicken with salt and pepper and brown on each side in same skillet you cooked the bacon in. Place chicken in casserole dish.
Cook onion, mushrooms, and apple in skillet until softened. Add wine or chicken broth. Mix in soup, bacon, and cheese; heat through.
Pour sauce over chicken and bake at 350 for 30 minutes.
While chicken is baking, cook spaghetti or any other pasta according to package directions. Serve chicken and sauce over pasta.

Birthday Fun
My crazy kid #1 turned 13 this last week so we had to have a big party. I just wanted to share the cute cupcakes we made. They were yummy and easy to make too. I saw the great idea here. The only thing I would change if I do it again is, I used the Wiltons no taste red and used half the jar and it still didn't seem to be as red as I wanted it. I guess I should have stayed with the red red that may affect the taste of your icing. Over all it turned out great and had a lot of fun making them with the crazy kids.

First Post
I am very excited to start my blog. I love doing things with my kids and have seen so many great ideas on pinterest, hopefully I will be able to make all the things I want. We have done a few things already, some that went well and some that didn't. I hope to be able to let everyone know the good, the bad and the ugly. haha Sometimes its easier to have someone else try it out first see how it goes and what they would change if anything. I wouldn't say I love to cook but I love to try new recipes and am always looking for new things to make. We also have our family favorites and great recipes that have been past down from generation to generation I will be sharing. I will be posting again soon!!
